白鹤是江西省的省鸟，被世界自然保护联盟列为极危物种，濒危等级最高，每年全球98%的白鹤会飞往鄱阳湖越冬。水草丰美、蝶湖洲滩的鄱阳湖是亚洲最大的越冬候鸟栖息地。
